'High Rise' cheese scones. Easy and quick to make and yummy. Recipe makes around 15 scones.
Method
Pre heat the oven to gas 7.
Beat the egg and mix in the milk.
In the mixer, using the K beater:
Mix the flour, salt and baking powder dry.
Cut the butter into small pieces and rub in.
Mix in the cheese, but reserve a small amount for the topping.
Change to the dough hook and add most of the milk and egg mixture, mix to form a workable dough.
Roll out to about 22mm thick on a floured surface.
Place on a floured baking sheet and glaze with the last of the milk and egg mixture.
Sprinkle remaining cheese on top and bake on the top shelf for about 10-15 minutes until golden.
Check if they're done by tapping the bottom - if they sound hollow then they're ready.
Eat warm with butter - Yummy...
